Lumen Field - Executive Steward

Summary

The Executive Steward is responsible for managing the sanitation and cleanliness of all kitchens and food preparation areas, small wares, and equipment. The Executive Steward will work with the property Sanitarian and Culinary leadership to reach all health, safety and third-party audit benchmarks. The Executive Steward must maintain excellent attendance and be available to work evening and weekend events as scheduled per business need.

Key Areas of Responsibility

  • Supervise and ensure the cleanliness and sanitation of all kitchen areas to include: walk-in coolers, floors, walls, rolling equipment, kitchen equipment, small wares, china, glass and silverware, hot boxes and rolling racks.
  • Supervise and ensure proper storage and rotation of product.
  • Supervise and ensure the removing of garbage and recyclables from the kitchen and food preparation areas and depositing them in the appropriate venue garbage and recycling area.
  • Supervise and ensure the cleaning of concessions equipment and ensuring items disassembled for cleaning are properly reassembled and operational.
  • Responsible for ensuring all concessions locations are clean and sanitized for every event.
  • Provide training, coaching, and leadership in sanitation guidelines, proper chemical use, and best practices.
  • Other duties and responsibilities as assigned.

Essential Job Duties

  • Working knowledge of all applicable sanitation requirements.
  • Ability to communicate with employees, co-workers, volunteers, management staff and guests in a clear, business-like and respectful manner which focuses on generating a positive, enthusiastic, and cooperative work environment.
  • Frequently reaches, lifts, stoops, bends, and cleans to maintain work area.
  • Walks and stands during entire shift.
  • Always on time and ready to perform all required duties.

Job Summary



Summary: Responsible for supervising and coordinating activities of non-cooking kitchen workers.

Essential Duties and Responsibilities:

  • Implement, oversee and follow up on all sanitation standards and procedures.
  • Responsible for ensuring food service equipment is secure and maintained in proper order.
  • Prepare weekly schedules and schedule additional personnel as needed.
  • Maintain control over inventory of china, glass and silver.
  • Oversee and maintain the supply of necessary equipment (china, glass and silver) to the Restaurant, Room Service and Banquet areas.
  • Ensures that supplies of coffee, coffee filters, bread, butter, jellies, dairy products, etc. at required stations.
  • Perform other duties as assigned.
